Aubert & Mathieu's 2024 Chardonnay, named "Suzy," is an organic, vegan-friendly white wine crafted from hand-harvested grapes in the argilo-calcareous high-altitude vineyards of the Pyrenees foothills. Embracing traditional winemaking, the grapes undergo manual sorting, followed by fermentation in oak barrels with daily lees stirring for 3 weeks. The wine ages for 6 months in demi-muids, developing a surprising purity and elegance.

Exhibiting citrus, apple, and peach flavors, the palate offers straightforward freshness with pleasant roundness. The vibrant, pop-colored labels reflect its joyful, anti-conformist character.
