Grape Variety - Sauvignon Blanc
History - The wine regions of South Africa are influenced by one
of the two powerful oceans that meet at the southern tip
of Africa: the Atlantic Ocean and the Indian Ocean.
Combining beneficial maritime influences, such as
steady coastal fog and cooling sea breezes, with a
moderate Mediterranean climate, distinct and varied
topography, and diverse soils provides the ideal
conditions for creating wines of unique character and
complexity.
Producer - Les Grands Chais de France Groupe
Regional Information - We have here three predominant soil types. The
sandstone, sandy with low nutrient and water retention
properties. The granite, red to yellow in color, acidic,
found on mountain foothills and hill ranges, with
good physical and water retention properties. And the
shale, highly structured, on partially decomposed parent
rock, with good nutrient reserves and water retention
properties.
Vinification Details - Cold maceration before fermentation to bring out all the
aromas of the grapes. Slow pressing of the grapes in a
pneumatic press. Racking by gravity.
